Java Pudding

Ingredients

  • 1 1/2 lbs semisweet, or bittersweet chocolate, chopped
  • 3/4 cup unsalted butter
  • 3/4 cup sugar
  • 8 eggs
  • 1 tsp. vanilla
  • 2 tsp. espresso powder

Preparation

Step 1

1) melt chocolate and butter in top of double boiler
set aside
2) beat sugar, eggs, vanilla, and espresso powder until pale yellow and thick
fold in 1/4 egg mix into chocolate
fold back into egg mix
do not over mix
3) spoon pudding into 12 shallow oven safe dishes
place dishes in large pan with 1" water
4) bake in 300 degree oven until a shell forms over top of pudding (45 min.)
set aside to cool till cool enough to touch
