Cream filled cupcakes

  • 1 box strawberry cake mix
  • 1/3 c strawberry applesauce
  • 5 large eggs, divided
  • 1 package fudge brownie mix
  • 1/2 c vegetable oil
  • 8 oz cream cheese, room temp
  • 1 c marshmallow cream
  • 1 package cool whip or make whipped cream
  • optional strawberries for garnish

Preparation

Step 1

1) heat oven to 350. place 36 cupcake liners in pans. mix cake mix, apple sauce, 3 eggs and 1c water for 30 seconds on low or til combined. increase speed to md and beat 2 minutes.

2) in bowl, stir brownie mix, oil, 1/4c water and remaining eggs 1 minute or til smooth. stir in 1c of the strawberry batter. fill liners 1/3 full with mixture.

3) bake 8 minutes and remove pan. top with remaining strawberry batter. bake 10 minutes or til done. let cool completely.

4) using mixer on md speed, beat cream cheese and marshmallow for 2 minutes or smooth. spoon into pastry bag with small plain tip. gently insert into cupcake pressing the piping bag til about 2tsp is added to cupcake.

5) spoon whipped topping into pastry bag with a star tip. place decorative swirl on each cupcake.
