Crock Pot Beef Stew

Ingredients
- 2 lbs. size-B red potatoes, quartered
- 1 cup chopped onion
- 2 tsp minced garlic
- 2 cups each of carrots and celery in 1/4-inch slices
- 1 cup red wine
- 1 (14.5 oz) can low sodium beef broth
- 1 (14.5 oz) can diced tomatoes
- 1 package dry stew seasoning mix
- 1 package dry brown gravy mix
- 1 bay leaf
- 2 lbs lean beef stew meat, dried on paper towels and tossed with 2 Tbsp cornstarch
- 2 Tbsp olive oil, divided

Step 1
1. Add all veggies, onion, and garlic to crock pot.
2. Preheat large nonstick skillet over medium-high heat. Add 1 Tbsp olive oil and half of the coated stew meat. brown on all sides and add to crock pot. Repeat with remaining 1 Tbsp olive oil and repeat with second half of the stew meat.
3. Add red wine, beef broth, tomatoes, stew seasoning and gravy mixes to the hot skillet.
4. Bring to a boil, and scrape up any bits stuck to bottom of pan. Pour over veggies and browned stew meat in slow cooker. Add bay leaf, stir together, cover and cook on low hear for 8 to 10 hours.
