Ingredients
- Cantaloupe, peeled, seeded, chopped 3 C
- Apple juice, unsweetened 1 C
- Basil, fresh, chopped 1/4 C
- Reduced fat coconut milk, skimmed 1/2 C
- Agave syrup 1 tsp
- Cantaloupe, peeled, seeded, finely diced 1/2 C
Preparation
Step 1
1. Purée all ingredients except finely diced cantaloupe.
2. Stir in cantaloupe for garnish and contrast of texture and serve.
Notes:
Substitute honeydew or any frozen fruit in place of cantaloupe for different flavor and appearance. Replace coconut milk with skim milk, rice milk, almond milk or vanilla soy milk. Try fresh mint instead of basil.
