Ingredients
- 3 1/2 c steam and mash frozen cut russet potatoes
- 1/4 c nonfat buttermilk
- 1/4 c tub style light cream cheese
- 2 T yogurt based spread (Brummel & Brown)
- 1 T chopped chives
- 1/4 t salt
- 1/4 t pepper
Preparation
Step 1
1. Cover the potatoes (in a bowl) with plastic wrap; vent. Microwave at 9 minutes or until tender. Stirring after 4 minutes.
2. Add remaining ingredients and mash.
Serving Size is 1/2 cup - 2 points
