Cake - Oatmeal Cake

Ingredients

  • 1 cup oatmeal
  • 1 1/4 cup boiling water
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 stick (1/2 cup) margarine
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/2 cup flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • ICING
  • Boil in saucepan for 1 minute, stirring constantly
  • 1 cup brown sugar
  • 1 stick (1/2 cup) margarine
  • 3 tsp. milk
  • 1/2 cup coconut
  • 1/2 cup nuts (broken/chopped walnuts or pecans)

Preparation

Step 1

> Bake @ 350 degrees 25-30 minutes
> (Or until toothpick inserted comes out clean)

> 1 cup oatmeal
> 1 1/4 cup boiling water
> Pour water over dry oatmeal and let stand
>
> 1 cup white sugar
> 1 cup brown sugar
> 1 stick (1/2 cup) margarine
> Blend well until creamy
>
> 2 eggs
> 1 tsp. vanilla
> Add to sugar mixture
>
> ***ADD SOFTENED OATMEAL***
>
> 1 1/2 cup flour
> 1 tsp. soda
> 1 tsp. cinnamon
> 1/2 tsp. salt
> 1/2 tsp. nutmeg
> Mix together and add to wet mixture. Pour into
> greased
> and floured 9X13"pan.

> ICING
> Boil in saucepan for 1 minute, stirring constantly
> 1 cup brown sugar
> 1 stick (1/2 cup) margarine
> 3 tsp. milk
>
> Remove from stove, and add
> 1/2 cup coconut
> 1/2 cup nuts (broken/chopped walnuts or pecans)
>
> Pour on warm cake
