Ingredients
- 2/3 c sugar
- 2/3 c water
- 3 c cubed pineapple
- 1 c cubed papaya
- 3/4 c coconut milk
- 1 T fresh lime juice
- 1 T light corn syrup
- 1/8 t salt

Preparation
Step 1
1. Combine sugar and 2/3 c water in a microwave safe dish; microwave at high for 4 min. Stir until sugar disolves; cool completely. Combine syrup, pineapple, and remaining ingredients in blender; process until smooth. Strain mixture thru a fine sieve over a bowl; discard solids. Pour into the freezer bowl or ice cream freezer. Freeze according to instructions. Spoon into a freezer safe container; cover and freeze 2 hours or until firm.
Try this in a cocktail glass w/ shot of chilled dark rum spooned over the top.
