Hearty Tortellini Soup

Ingredients

  • 2 cloves garlic
  • 1 Tbsp margarine
  • 1 (13 3/4 oz) cans of chicken or beef broth
  • 1 (8 oz) pkg fresh or frozen cheese tortellini
  • 1 (10 oz.) pkg fresh or frozen spinach, thawed
  • 1 (16 oz) can stewed tomatoes, undrained & coarsely chopped
  • Grated Parmesan cheese

Preparation

Step 1

In large saucepan, over medium heat, cook garlic in margarine for 2-3 minutes. Add broth and tortellini, heat to a boil. Reduce heat; simmer 10 minutes. Add spinach and tomatoes; simmer 5 minutes more.*

Serve topped with cheese.



* I like to let it simmer for at least 20-30 minutes to enhance the flavor.
