Ingredients

  • 1 3/4 cup flour
  • 3/4 cup sugar
  • 2 1/2 rsp baking powder
  • 1/4 tsp salt
  • 3/4 cup part skim ricotta cheese
  • 1/2 cup water
  • 1/4 cup olive oil
  • 1 Tbsp grated lemon rind
  • 2 Tbsp lemon juice
  • 1 large egg lightly beatned
  • Large granule sugar for topping

Preparation

Step 1

Preheat oven to 375 degrees
Combine flour and next three ingreideints. Combine wet ingredients (through egg). Add mixture to flour mixture until moist. Line muffin cups and bake at 375 for 16 minutes
