Ingredients

  • 1/2 cup LAND O LAKES® Sour Cream
  • 3 tablespoons finely chopped red bell pepper
  • 2 teaspoons chopped fresh dill*
  • 1/2 teaspoon grated lemon peel
  • 1/8 teaspoon salt
  • 1/8 teaspoon granulated sugar
  • 20 large cherry tomatoes
  • 2 small cucumbers, each cut into 8 (1/2-inch) slices
  • Fresh dill sprigs, if desired

Preparation

Step 1

1. Stir together sour cream, red pepper, dill, lemon peel, salt and sugar in small bowl. Cover; refrigerate at least 20 minutes.

2. Meanwhile, cut thin slice off top and bottom of each cherry tomato. Place tomatoes and cucumber slices onto serving platter; dollop each with about 1/2 to 1 teaspoon sour cream mixture. Garnish with fresh dill, if desired.

Note: This recipe also makes a great dip for almost any vegetable platter. Use with Celery stalks, baby carrots, broccoli or cauliflower.
