Chicken Chasseur

Ingredients

  • 3 whole chicken breasts, cut into 1" long strips
  • 1/3 cup flour
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup oil
  • 1 large onion, finely chopped (1 cup)
  • 1 clove garlic, finely chopped
  • 1/2 lb mushrooms, sliced (2 cups)
  • 1/2 tsp thyme, crumbled
  • 1/2 tsp tarragon, crumbled
  • 1 can chicken broth
  • 1 can tomatoes (1lb)

Preparation

Step 1

1. In bag, dredge chicken pieces in the flour mixed with the salt and pepper.

2. Heat oil in skillet. Brown chicken pieces quickly. Remove with slotted spoon and drain on paper towels. To oil remaining in skillet, add onion and sauté until tender, but not browned. Add garlic and mushrooms and cook 3 mins. Sprinkle with thyme and tarragon.

3. Add the broth and tomatoes and bring to
boil. Return chicken to pan and cook 10 mins. Serve over rice or noodles.
