  • 4 c plain flour
  • 1 1/2 t baking soda
  • 1/2 t salt
  • 1 c butter, softened
  • 2 c firmly packed brown sugar
  • 2 large eggs
  • 1 t vanilla
  • 2/3 c sour cream
  • 3 c roasted cashews, chopped
  • 1 c butter
  • 4 c powered sugar
  • 6 T heavy cream
  • 1/2 t vanilla
  • Whole cashew, for garnish
  • 1 1/2 t baking powder

Preparation

Step 1

1. heat oven to 350 F.
Grease 2 large cookie sheets
Combine flour, baking powder, soda and salt in bowl.
Beat 1 c butter and brown sugar in large lowl w/ electric mixer until light and fluffiy. Beat in eggs and 1 t vanilla. At low speed beat in sour cream, beat in dry ingredients. Stir in choppe cashew..
2. Drop dough by rounded t. into prepared cooked sheets. Bake 12 min. or until lighty browned. Cool on wire racks,
3. Make Brown Butter Frosting
Melt 1 c butter in saucepan over med. heat until lightly browned. Remove from heat. Whisk in powdered sugar, then cream and 1/2t vannilla until smooth. Spread warm frosting on cookiesm, Garnish each w/ a whole cashew.
