Plantain Cassrole Recipe

  • 1 lb ground beef
  • 1 tsp of seasoning salt
  • 1/2 tsp oregano
  • 1/4 tsp thyme
  • 1/8 tsp black pepper
  • 1/4 tsp minced garlic
  • 1 green pepper, finely chopped
  • 1 small onion finely chopped
  • 1/2 cup tomato sauce
  • 5 ripe plantains (almost black skinned)
  • 1 egg
  • 1/2 cup shredded mozarella cheese
  • 1/2 cup shredded cheddar cheese (mix both cheeses together)
  • oil for frying plantains

Preparation

Step 1

Preheat oven to 350. Brown and season ground meat. Be sure there are no clumps in the meat. Break up very fine and drain well. Add tomato sauce (enough to wet meat but not soak it) and stir in all ingredients. Once cooked, set aside.

Cut plantains angle or lengthwise, as thin as possible. Sometimes tough to get them all the same size, but that's okay. (at least 1/4 inch) Fry in hot oil until lightly browned on both sides. They cook pretty quick. Drain well on paper towel covered dish. In a 9" square pan or rectangular 9x13, pour partially beaten egg. Coat bottom and sides of pan lightly with egg. Line bottom of pan with one layer of fried plantains. Sprinkle the cooked ground beef over the platains and then the combined cheeses over the meat. Top with plantains and lkightly coat with the remaining beaten egg.

Bake at 350 for 15 minutes uncovered.
