Italian Sausage Soup

Ingredients

  • 8 oz. mixed hot & mild Italian turkey sausage
  • 2 C chicken broth
  • 1 14.5 oz.can crushed tomatoes
  • 2 C baby spinach leaves
  • 2 T grated Parmesan cheese
  • 2 T chopped fresh basil
  • 1/2 C cooked small shell pasta

Preparation

Step 1

Heat large skillet over med heat. Remove sausage from casing & add to p Cook @ 5 min, stirring to crumble. Drain; return to pan.

Add broth & tomatoes to pan & bring to a boil. Cover, reduce heat & simmer 10 min. In separate saucepan, cook pasta shells to al dente. Remove soup from heat; stir in spinach until wilted. Sprinkle with Parmesan & basil after add cooked shells to each bowl.
