Peach Pie

What's better than a warm, delicious home-made peach pie? A warm peach pie served with vanilla ice cream!

Ingredients

  • Topping:
  • 6 to 8 peaches, finely chopped
  • Pillsbury pie crusts
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 2 teaspoon corn starch
  • 1 teaspoon vanilla extract
  • 6 dabs butter
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon

Preparation

Step 1

Preheat oven to 350°F.

Prepare bottom pie crust in pie plate. bake bottom crust for 5 to 10 minutes. Remove from oven and set aside.

Mix all other ingredients except butter in a large bowl.

For topping mix sugar and cinnamon together and set aside.

Pour peach mixture into pie crust. Place 6 dabs of butter scattered across filling. Roll out second pie crust and slice into 3/4-inch strips. Start at the center and place strips in a basket weave design on top of pie filling leaving 3/4-inch space between each strip. Sprinkle sugar/cinnamon mixture on top of top crust and bake for 45 minutes or until golden brown.

Tip: I set the pie plate on a pizza pan while baking to catch any drippings from pie. Keeps you from having to clean the bottom of your oven.
