Ice Cream Sandwiches

Your favorite ice cream + two incredibly decadent cookies = an ice cream sandwhich worth screaming for.

Ingredients

  • 1/4 c. all-purpose flour
  • 1/4 c. dutch-process cocoa
  • 1/4 tsp fine salt
  • 1/8 tsp baking powder
  • 3 tbsp unsalted butter, softened
  • 1 tbsp shortening
  • 1/2 c. sugar
  • 1 large egg, beaten
  • 1/2 tsp pure vanilla extract
  • 2 pints any flavor ice cream

Preparation

Step 1

Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.

Whisk the flour with the cofoa, salt, and baking powder in a small bowl. In another bowl beat the butter, shortening and sugar with a handheld electric mixer utnil fluffy. Add the egg and vanilla and beat until smooth. Stir in the flour mixture by hand to make a smooth dough.

Using 1 heaping tblsp per cookie, drop 6 mounds of dough on each baking sheet, leaving a couple inches betweeen each cookie. Bake for 15 mintues. (For even baking, rotate the pans from top to bottom and back to front about halfway through baking). Using a spatula, transfer the dookies to a wire rack and cool completely.

Meanwhile, turn the ice cream pints on their sides and use a serrated knife to slice each through the container into 3 even rounds. Freeze the ice cream disks until ready to assemble the sandwiches.

To assemble: Peel tge cardboard from the ice cream disks and sandwich each between two cookies. Serve immediately, or wrap individually in plastic wrap and freeze for up to 1 week.

The bottom of some ice cream containers have a little lip to them, so take that into consideration when you are cutting the disks.
