Ingredients
- 2 Tbs extra virgin olive oil, divided, plus extra for brushing the baking dish
- 1 cup fresh spinach, chopped
- 3 scallions, sliced
- 1/2 cup parsley, chopped
- 2 garlic cloves, minced
- 1 Tbs sesame seeds
- zest of one lemon
- salt and pepper
- 6 – 8 Dover sole fillets (about 1-1/2 lb)
- 1 cup whole wheat panko crumbs
- 1 tsp dried minced onion
- 1/2 tsp garlic powder
- 1 Tbs butter
Preparation
Step 1
Preheat oven to 350 degrees.
Heat 1 Tbs oil in a skillet over medium heat. Add spinach, scallions, parsley, and minced garlic. Saute, about 3 minutes, until spinach and parsley are wilted. Stir in sesame seeds and lemon zest. Stir one minute more.
Season fish fillets with salt and pepper. Divide spinach mixture among fish, and rollup. Place rolls, seam-side down, in a baking dish brushed with oil.
In same skillet, heat 1 Tbs oil. Add panko, minced onion, garlic powder, and salt and pepper to taste. Stir 1 minute. Add butter and stir until butter is melted. Spread crumbs over fish.
Bake fish in oven 20 minutes. Serve with broccoli rabe if desired.
