Skillet Broccoli with Pine Nuts & Parm

    c pine nuts

    T olive oil

  • 1/1

    /2 lb broccoli, copped into ½ in pieces

  • 4

    garlic cloves

  • t red pepper flakes

  • ½

    c chicken broth

  • ½

    c grated Parm


Toast pine nuts in large skillet over medium heat, stirring frequently, until golden and fragrant, about 5 mins. Set aside. Heat oil in skillet over med high heat and broccoli stems and cook, stirring until spotty brown, about 3 mins. Stir in garlic and pepper flakes and cook until fragrant, about 30 seconds. Add broccoli florets, broth and salt and cook covered over medium low heat until broccoli stems and florets are nearly tender, 5 to 7 mins. Remove lid and cook until liquid evaporates, abut 1 minute. Off heat, sprinkle with Parm ad tasted pine nuts. Season with s & P.
