Ingredients
- 2 lemons, divided
- 6 halibut steaks or tilapia fillets (about 1 1/2#)
- 2 Tbp. olive oil
- 2 Tbsp. white wine
- 2 cloves garlic, peeled and minced
- 1/4 cup chopped scallions
- 2 Tbsp. chopped fresh parsley
Preparation
Step 1
Heat grill. Cut dix 10" squares of heavy-duty foil.
Zest and juice 1 lemon; trim and slice remaining lemon.
In medium bowl, whisk together olive oil, 3 Tbsp. lemon juice, 2 tea. lemon zest, white wine and garlic until blended. Stir in chopped scallions and parsley.
Season halibut steaks with salt and ground pepper, if desired. Place 1 halibut steak in center of each foil square.
Pour lemon-oil mixture evenly over halibut steaks. Top with lemon slices. Fold foil over fish and press to seal edges tightly.
Grill 8 minutes, or until fish flakes easily with a fork. Garnish with chopped fresh parsley, if desired.
