  • STREUSEL TOPPING:
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 Eggs
  • 1/2 cup butter, melted
  • 1-1/4 teaspoons vanilla extract
  • 1-1/2 cups chopped peeled tart apples
  • 1/3 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon cold butter

Preparation

Step 1

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the eggs, butter and vanilla; stir into dry ingredients just until moistened (batter will be stiff). Fold in apples.
2. Fill greased bread pan. In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.
3. Bake at 350° for approx. 50 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.
