Cranberry Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup salted butter, softened
  • 1 1/4 cups sugar
  • 1 egg
  • 2/3 cup mashed banana, very ripe
  • 1 1/4 cups whole cranberries
  • 1/2 cup toasted walnuts, chopped

Preparation

Step 1

Preheat the oven to 350 degrees. Grease a 9"x5" loaf pan. Set aside.

In a small bowl, sift the flour, baking powder, salt, and baking soda. Set aside.

In a large mixing bowl, cream the butter and the sugar. Add the egg and beat until smooth. Scrape down the bowl, add the flour mixture, and mix until just combined. Fold in the mashed bananas, cranberries, and nuts. Spoon the mixture into the prepared pan.

Bake 1 hour, or until a cake tester comes out clean when inserted into the middle of the loaf. It may need another 10 minutes or so. Cool in the pan 10 minutes, then remove bread to a wire rack.
