Butternut Squash Bisque

Ingredients

  • 3 TBS butter
  • 1 medium onion, diced
  • 2 tsp. fresh minced ginger
  • 2 TBS brown sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. red pepper flakes
  • 2 cups chicken broth
  • 2 cups cooked, mashed butternut squash
  • 1 cup 1/2 & 1/2 or light cream

Preparation

Step 1

Cook medium butternut squash and remove the rind.
Cook onion in butter until soft, (4-5 min)
Place squash, onion, ginger, brown sugar, cinnamon, red pepper, and chicken broth in blender or food processor and puree.
Simmer on low heat. Just before eating, add 1/2 & 1/2 or light cream, and heat through.
