Potato Salad

  • 4 lbs Red Potatoes, cut into quarters. (I use the really small ones and just cut them in half).
  • 4 large hard boiled eggs
  • 2 cups (approx) mayonnaise
  • 4 green onions (scallions) diced
  • 3 stalks celery diced
  • 1 tbls dry mustard
  • white pepper
  • Kosher salt



Step 1

In a large pot, add potatoes and water to cover. Bring to a boil and cook until fork tender. Drain and cool. Meanwhile finely chop hard boiled eggs.
Put Potatoes, egg, green onions, celery, mustard into a large bowl. S&P to taste. Add Mayonnaise and combine. Cover and chill for at least 3 hours before serving.
