Pear Walnut Muffins

I love the heady spiced scent of these muffins when they are fresh from the oven. These muffins are wonderful with a cup of hot apple cider or a cup of tea. Enjoy!
Ingredients
- MUFFINS:
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar, packed
- 2 1/4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 medium pear, peeled and chopped finely
- 1 egg
- 1/2 cup yogurt, plain
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil

- TOPPING MIXTURE:
- 1/3 cup brown sugar, packed
- 1/3 cup chopped walnuts
- 1/4 cup flour
- 2 tablespoons butter, melted
- 1 teaspoon cinnamon
Preparation
Step 1
Preheat oven to 350 degrees.
Sift first six ingredients together into a large bowl, rubbing the sugar through the sifter. Stir in chopped pear.
Whisk together egg, yogurt, vanilla and oil. Stir into dry ingredients until just combined. Do not over mix. Fill greased muffin cups about 2/3 full.
For the topping, combine brown sugar, chopped walnuts, flour, butter and cinnamon. Sprinkle evenly over the muffins. Bake for 20 to 25 minutes, until lightly browned.
Makes 8 to 9.

I came 2nd in the work bake-off! This was my recipe of choice for our work Muffin Bake-off and these muffins came out moist and aromatic. It was a great favourite and I came 2nd in the bake-off. I will definitely use this recipe again. The only thing is that I would use a lot less salt than the recipe states.
Absolutely scrumptious! These pear muffins was so very delicious - especially when served warm. I made them two days in a row - a great way to use up a pear that is overripe.
