Ingredients
- Puffs:
- 1 cup water
- 1/2 cup crisco
- 1 cup flour
- 4 eggs
- Filling:
- 2 eggs
- 1/2 cup flour
- 1 tsp vanilla
- 2/3 cup sugar
- 2 cups milk
Preparation
Step 1
Preheat oven to 425
Puff:
Boil water. Add crisco and stir until it melts. Turn heat to low and add flour slowly and stir until it forms a round ball. Cool for 5 minutes (very important cuz if its too hot it cooks the egg). Add 1 egg at a time, stirring after each. After all eggs are in, stir really well!
Place 1/2-1 tsp ball on ungreased cookie sheet. Bake 15min at 425; then lower heat to 400 and bake additional 15 minutes.
Filling:
In saucepan, mix flour, sugar and eggs. Heat milk separetly. Slowly add heated milk to flour mixture. Stir well (constantly). When it starts to thicken, whip it with a wire whisk. Cool. Stir in vanilla.
Cut puffs in half and fill. Sprinkle with powdered sugar or top with frosting.
