Satay Chicken

Ingredients

  • 1/2 cup BBQ sauce
  • 1/2 cup creamy peanut butter
  • 1/2 cup fresh lime juice
  • 3 tbsp chopped cilantro
  • 2 lbs boneless skinless chicken breasts, cup into strips
  • 24 wooden skewers soaked in water for 1 hour.

Preparation

Step 1

1. Mix BBQ sauce,peanut butter,lime juice and cilantro in a resealable bag. Add chicken and seal bag. Turn bag several times to coat chicken. Refrigerate over night.

2. Heat grill to med-high heat. Remove chicken from marinade; discard marinade. Thread chicken on skewers and grill 4-5 mins per side or until chicken is cooked through.
