Emeril's 3 Cheese baked Mac n Cheese
- coarse salt
- 1/2 lb elbow macaroni
- 3 slices bacon, cut crosswise into 1/2 inch pieces
- 1 1/2 t minced garlic
- 3 L eggs
- 1 can (12 oz) evaporated milk
- 1/4 t cayenne pepper
- 1/8 t ground nutmeg
- 1 1/2 C grated sharp cheddar (6oz)
- 1/2 C grated Monterey jack cheese (2oz)
- 1/2 C finely grated Parmesan (1oz)

Preheat oven to 475
In a large pot, of boiling salted water, cook macaroni for 6 minutes (it will be undercooked)
Heat small skillet over medium heat and cook bacon until crisp.
Add garlic and cook for 30 seconds.
With slotted spoon, transfer bacon mix to medium bowl.
Add macaroni and stire to combine.
In large bowl, whisk together eggs and evaporated milk.
Add 1/2 t salt, cayenne, nutmeg, and cheese. Mix well.
Add macaroni and stir well.
Transfer to an 8 or 9 inch squar baking dish.
With a spoon, spread into an even layer.
Bake until sauce is bubbling. About 12 minutes.
Let rest for 10.
