Ingredients

  • Fruit sauce:
  • Cherry Crepes
  • 1 c self rising flour
  • 1 t sugar
  • 4 eggs
  • 1 1/2 c whole milk
  • 2 T oil
  • 1 pkg frozen berries
  • 1/2 c sugar
  • 1 T cornstarch

Step 1

1. Crepes: Beat eggs and all other ingred. Blend until smooth. Heat over med heat in 10: skilled and lightly buttered pan. Add 3 T batter and swirl to coat bottom of pan. Cook until top of crepe is dry then flip and cook for another 30 seconds. Crepes should be very thin.
2. Fruit Sauce: Combine ingredients and heat over medium high heat stirring until sugar melts and sauce thickens. Sauce can be made the night before, refrigerated and heated just before serving.
3. To serve, fold crepes in half ad in half again to form triangles. Place 3 on plate, ladle hot fruit sauce over crepes. Dust w/powdered sugar. May be served with sausage or bacon.
