Asparagus with Dijon Hollandaise

Ingredients

  • 3 lbs. fresh asparagus spears, trimmed
  • 1/4 cup water
  • 1 package hollandaise sauce mix (plus ingredients to make sauce)
  • 1 t Dijon mustard
  • 1/2 t lemon pepper
  • 6 round buttery crackers, crushed (about 1/4 cup)
  • 1 T butter or margarine, melted
  • 2 T diced red bell pepper

Preparation

Step 1

Preheat oven to 375 degrees. Arrange asparagus in baking dish and add water. Cover with plastic wrap. Microwave on high for 5-8 minutes or until asparagus is crisp-tender, drain.

Prepare hollandaise sauce according to package. Add mustard and seasoning mix. Pour sauce over asparagus.

Melt butter, mix with crushed crackers; sprinkle over hollandaise sauce, top with bell pepper.

Bak 10-12 minutes.
