Easter "Pizza"

This is the traditional Easter breakfast in my home. My Mom and her sisters and brother gather on Good Friday each year to make several dozen of the pies. Children, Grandchildren and Great Grandchildren have joined over the years.

Ingredients

  • Filling:
  • 1 large ricotta (2 #)
  • lots of pepper
  • 12 large eggs
  • 1 1/2 cup grated parmesan
  • 5 cups of cubed ham (1/2 inch cubes)
  • Stir it all together in a large bowl.
  • Crust:
  • 5 cups flour
  • 5 heaping TBS Crisco
  • pinch of salt and pepper
  • 4 eggs
  • 2 ts baking powder
  • enough water to form a pliable dough.

Preparation

Step 1

mix the crust to form a pliable dough.
Use 2/3 of the dough and roll to a large rectangle. Line a 9 x 13 baking pan.

Pour the filling into the pan. Filling will rise.

Using the last 1/3 of the dough roll a rectangle top to cover the filling. Crimp the edges and prick the top crust to allow steam to escape.
Bake for 75 minutes at 350 degrees.
