Rhubarb Crisp

  • 2 cups rhubarb
  • 1 cup flour
  • 1 cup oatmeal
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup vegetable oil or butter
  • 1 cup water
  • 1 cup sugar
  • 2 Tbsp cornstarch



Step 1

Boil rhubarb 10 minutes. Drain.

Combine flour, oatmeal, brown sugar, cinnamon and oil/butter into crumbly crust. Put 1/2 mixture into a greased pan.

Boil water, sugar and cornstarch until thick (3 minutes). Put cornstarch in a little water then add to the water and sugar. Put rhubarb on crust. Pour sugar and water over rhubarb. Sprinkle rest of crush on.

Bake at 315 for 30-45 minutes.
