Sausage, Peppers, Onions & Garlicky Tomatoes

Surprised that sausage links work in a slow cooker? We were, too! The result is super-tender meat that really makes this dish. Kick up the spice by using hot Italian sausage, or swap the bread for rigatoni for a more filling meal.

Ingredients
- 1 28-oz. can diced tomatoes, drained
- 4 cloves garlic, chopped
- 1 large red onion, sliced 1/2 in. thick
- 1 red bell pepper, sliced 1/2 in. thick
- 1/4 cup dry white wine
- 1 lb. Italian sausage links, halved crosswise
- 4 thick slices country bread, toasted
- Pepper
- 1 oz shaved Asiago (about 1/4 cup)
Preparation
Step 1
1. In a 5- to 6-qt slow cooker, combine the tomatoes, garlic, onion, bell pepper and wine.
2. Nestle the sausage among the vegetables and cook, covered, until the sausage is cooked through, on low for 7 to 8 hours or on high for 4 to 5 hours.
3. Serve the sausage and vegetables over the toast, sprinkle with black pepper and top with the cheese.
Prep Tip: Nearly any type of cheese will work in this recipe. Try grating mozzarella, shaving Parmesan, or crumbling goat cheese over the top.
