Ingredients
- Asparagus:
- 1 lb asparagus, trimmed
- 1 tbsp olive oil
- 2 tbsp pine nuts, toasted
- 1/4 cup shaved Parmesan cheese
- Vinaigrette:
- 2 tbsp finely chopped shallots
- 2 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tbsp drained capers
- 2 tbsp chopped flat-leaf parsley
- 3 tbsp extra virgin olive oil
- Salt and freshly ground black pepper
Preparation
Step 1
Asparagus:
Brush asparagus with olive oil, and season with salt. Grill over medium-high heat, turning often, until asparagus is just tender, about 8 -10 minutes. Transfer asparagus to a warm plate.
Mix the shallots, lemon zest and juice, capers and parsley in a small bowl. Whisk in the olive oil, and season to taste with salt and pepper. Drizzle vinaigrette over asparagus. Sprinkle with pine nuts and top with Parmesan cheese.
