Ingredients
- 2 tablespoons canola oil - divided
- 1 lb shrimp - uncooked, shelled & deveined tails on
- 3 tsp. creole seasoning - divided
- 2 lge Green bell peppers - chopped
- 1/2 lge chopped onion
- 3 ribs celery - thinly sliced
- 2 cloves minced garlic
- 1 14.5 oz undrained stewed tomatoes
Preparation
Step 1
Heat 1 tablespoon oil in large nonstick skillet on medium high. Add shrimp and 1 teaspoon creole seasoning. Cook 2 minutes per side. Remove to plate and cover.
Add remaining oil, peppers, onion, celery and garlic. Cook 5 minutes, stirring occasionally. Scrape up any browned bits in skillet. Add tomatoes and remaining 2 teaspoons creole seasoning. Simmer, covered, 7 minutes. Stir in shrimp, cover & cook 2 minutes on medium low or until heated through.
