Split Pea Soup

Ingredients

  • Recipe can be cut in half
  • 8 cups water
  • 3 cups split green and yellow peas (dried)
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 1 large onion, chopped
  • 1 large potato, peeled
  • 3 cloves minced garlic
  • 1/4 tsp. thyme
  • 1 pinch cayenne
  • 1 bay leaf
  • salt
  • pepper
  • croutons

Preparation

Step 1

Rinse split peas and place in large saucepan. Pour in water and bring to boil, skimming off foam. Stir in bay leaf. Reduce heat and simmer until peas are tender, about 55 mins. Meanwhile, chop celery, carrots, potato and onion into bite-sized pieces. In large skillet, heat oil over medium high heat. Cook celery, carrots, potatoes, onion and garlic for 5-7 mins. or until softened. Add to saucepan. Simmer, covered for 20-30 mins. or until vegetables are tender. Remove bay leaf. Season with salt and pepper. Ladle into bowls and sprinkle with croutons.

For smooth soup, puree. Or puree 1 cup and stir back into soup.
