Linguine with Shrimp and Pesto

  • 12

    oz. linguine(reserve 1 cup of the cooking water)

  • ¼

    c. toasted pine nuts

  • 1

    t. oil

  • 1

    lb. large peeled shrimp

  • ½

    t. cumin

  • 2

    diced large plum tomatoes

  • 6 oz. tub basil pesto

  • ¼

    c. chopped parsley

  • Grated Parmesan


Cook linguine according to package directions. Toast pine nuts Heat oil in skillet. Add shrimp and cumin; sauté over medium-high heat for two minutes or until shrimp are cooked through. Add tomatoes, pesta and parsley. Toss until hot. Remove fro heat. Toss with drained pasta and reserved cooking water as needed. Serve with grated Parmesan.
