Bubie's Chopped Eggplant

Ingredients

  • 1 or more eggplants--good size
  • onion
  • olive oil
  • vinegar
  • salt
  • tomatoes and olives for garnish

Preparation

Step 1

On a grill, roast the eggplant til collapsed and mushy.

Cool, then rinse and remove skin and any little black flecks of burnt skin.

Drain and chop in food processor til fairly smooth

Chop onion til a bit of texture, not just mush

Add vinegar, salt and olive oil to both ingredients to tast

Garnish with grape tomatoes and Greek black olives
