White Christmas Cake

I have to admit I’m not a big fan of fruit cake, but this recipe was fantastic! Thank you again Carol and Elgin!

Ingredients
- Mix in large dish:
- 2 lb. red glazed cherries
- 1 lb. deluxe glace mix
- 1 lb. pineapple wedges
- 3 lb. light raisins
- 1 lb. coconut
- 1/2 lb. blanched almonds
- 1/2 lb. Brazil nuts
Preparation
Step 1
Mix 5 cups flour with 2 tsp. baking powder. Add to fruit mixture and stir.
Cream:
1 lb. butter
2 cups sugar
Add:
12 egg yolks
1 pint cream (500 ml)
1 tin crushed pineapple (190z.)
Mix into fruit and flour mixture. Beat egg whites and add to above mixture. Put into 8 foil loaf pans. Bake at 275°F for 1 our; at 250°F for 1 hour; 1/2 hour inside oven, no heat, door partly open.
