Grandma's Meatloaf

Ingredients

  • 1 cup mashed potato
  • 1 small onion, minced
  • 1/2 cup chopped pecans
  • 2 lbs lean ground beef
  • 1 small can evaporated milk (2/3 cup)
  • 1/3 cup water
  • 1 egg
  • 1 1/2 t. salt
  • pepper
  • 1/4 t. celery seed
  • 1/4 t. oregano
  • Topping: optional
  • 1 cup mashed potato
  • 1 t. chives
  • pepper
  • paprika
  • butter or margarine

Preparation

Step 1

Combine all ingredients except paprika and mix well. Pack into loaf pan and bake at 350F for 1 hour 15 mins.

Drain and turn over into loaf pan.

If using topping:

Top with additional cup of mashed potatoes mixed with chives and a dash of pepper. Dot with butter and broil until lightly browned. Garnish with parsley.
