Ingredients
- 1/4 cup Butter
- 1 Onion minced
- 2 cups Raw rice
- 12 Mushrooms - fresh and chopped
- 1/2 cup Dry White Wine
- 1/4 cup Melted butter
- 10 cups Chicken Broth
- 1/4 tsp Saffron
- 1 cup Parmesan cheese
Preparation
Step 1
IMPORTANT: Requires constant close attention and frequent stirring!!
Heat 1/4 cup butter in saucepan and cook onion til translucent. Add white pepper and rice. Stir until rice is coated with butter.
Add white wine and stir for 3 minutes. Slowly add chicken broth 1/2 cup at a time, stirring slowly.
Add mushrooms. Reserve 1 cup of broth and add saffron to it. After rice has cooked 15 minutes, add saffron stock, stirring again.
Add 1/2 cup cheese. Cook 10 minutes for a total of 25 minutes.
Serve at once and toss remaining 1/4 cup butter and Parmesan Cheese.
