Basil & Tomato Halibut

Ingredients
- 1 T. olive oil
- 1 t. butter
- 1 onion, sliced
- 4 cloves garlic minced
- 8 roma tomatoes, diced
- 14-1/2 oz. can chicken broth
- 1 t. seafood seasoning
- salt & pepper to taste
- 2 lbs. halibut fillets
- 3 T. fresh basil, chopped
- Optional: cooked brown or wild rice

Preparation
Step 1
Heat oil and butter in a skillet over medium heat. Add onion and garlic. Sauté for 3 minutes; stir in tomatoes, broth and seasonings. Add fish to skillet. Reduce heat to medium-low. Cover and cook until fish flakes easily, about 8 minutes. Remove fish from sauce to a plate. Add basil to sauce in skillet; stir and spoon over fish and rice, if using. Makes 6 servings at 190 Calories each, excluding optional rice.
