Salted Peanut Bars

Ingredients

  • Crust:
  • 1/2 cup butter, softened
  • 2/3 cup brown sugar
  • 2 egg yolks
  • 1 1/2 cups flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3 cups mini marshmallows
  • Topping:
  • 2/3 cup white corn syrup
  • 1/4 cup butter
  • 2 tsp vanilla
  • 12 oz peanut butter chips
  • 2 cups rice krispies
  • 2 cups salted peanuts

Preparation

Step 1

Mix all crust ingredients in large bowl until will mixed. Press firmly in bottom of 9x13 pan. Bake 350 for 12-15 minutes. Remove from oven and spread marshmallows on crust and return to oven for 2 minutes, until marshmallows begin to puff.

While crust is baking prepare topping. Heat first 4 ingredients in pan until melted and smooth, stirring constantly. Remove from heat and stir in rice krispies and peanuts. Spoon and spread over marshmallows.

Cool. Cut into serving pieces.
