Oatmeal-Raisin Cookies

Ingredients

  • 3 cups quick-cooking oats
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter or margarinne, at room temp
  • 1 cup sugar
  • 1/4 cup granulated fructose
  • 1 1/2 tsp vanilla
  • 1 egg
  • 1/4 cup water
  • 1 1/4 cups (5oz) coarsely chopped walnuts
  • 1 cup raisins

Preparation

Step 1

Heat oven to 350.

Mix oats, flour, baking soda and salt.

In large bowl, beat butter, sugar, fructose and vanilla with electric mixer on medium speed until fluffy.

Beat in egg and water until blended.

With mixer on low speed gradually add flour mixture; beat just until well blended. With wooden spoon stir in walnuts and raisins.

Drop by heaping tablespoonfuls 2 inches apart on ungreased cookie sheet. Bake 10-12 minutes until golden brown. Cool on sheet about 1 minute before removing to racks to cool completely.
