Chili Mexicana

Absolutely without a doubt the best Chili recipe ever! If you like it hot and spicey this is the best. I use about 4 - 5lbs of beef and 4x the recipe. I use the whole can of Chipotle Peppers in Adobo sauce.

Ingredients

  • 1 Tbsp. Oil
  • 1 lb Ground Beef
  • 1 C. Chopped Onion
  • 2 Cloves of Garllic
  • 2 Tsp. Chopped canned Chipotle Peppers in Adobo Sauce
  • 2 Tbsp. Chili Powder
  • 1 Tbsp. Cocoa Powder
  • 2 Tsp. Cumin
  • 2 Tsp. Oregano
  • 1 Tsp. Salt
  • 1 - 28 oz Diced Tomatos
  • 1 - 19oz can Kidney Beans
  • 1 C. Water
  • 1/2 C. Canned Roasted Red Peppers
  • 1 Tbsp. Red Wine Vinegar

Preparation

Step 1

Fry the onions and garlic in the oil for a few minutes and add the beef. Cook until browned. Add all the spices and cocoa powder and then all the canned ingredients plus water. Cook for a couple of hours. Freezes well.
