Applesauce

Ingredients

  • 3-4 lbs of peeled, cored and quartered apples. (granny smith, fuji, gala). Make sure to use good cooking apples.
  • 4 strips of lemon peel - use a vegetable peeler to strip the lengths.
  • Juice of one lemon
  • 3 inches of cinnamon stick
  • 1/4 cup dark brown sugar
  • 1/2 cup white sugar
  • 1 cup water
  • 1/2 tsp salt

Preparation

Step 1

Put all ingredients into a large pot. Bring to boil. Lower heat and simmer for 20-30 minutes and remove from heat. Remove cinnamon sticks and lemon peels. Mash with a potato masher.

Put in hot small jars.
