Chicken and Biscuit Bake

Ingredients

  • 2 tbsp butter
  • 1/4 cup carrots, peeled and diced
  • 1/4 cup celery, diced
  • 1 medium onion, diced
  • 4 tbsp flour
  • 2 cups cooked chicken, diced
  • 1 1/2 cups chicken broth
  • 1 medium potato, diced
  • 1/4 cup peas
  • Salt and pepper to taste
  • 1 can biscuits or homemade biscuits

Preparation

Step 1

Melt the butter in a large dutch oven. Add the carrots, celery and onions. Cook until just soft. Sprinkle on the flour and cook for 3 minutes. Whisk in the broth. Add the cooked chicken, potatoes and peas. Simmer until thick. About 35 minutes and the potatoes are soft.

Preheat oven to 375F. Cook the biscuits on a cookie sheet for 5 minutes. Remove from the ovena nd place the biscuits on top of the stew. Place in the oven and bake until the biscuits brown.

Serve warm.
