CHORIZO BUTTERNUT SPIRALS WITH RED BELL PEPPERS

Ingredients

  • PEDERSON’S FARMS CHORIZO
  • CECE’S™ VEGGIE CO. – BUTTERNUT VEGGICCINE
  • 1 MEDIUM ONION, DICED
  • 1 LARGE GARLIC CLOVE, MINCED
  • 1 TBSP OLIVE OIL
  • 1 RED BELL PEPPER, DICED
  • SALT AND PEPPER

Preparation

Step 1

Heat skillet to medium-low heat and sauté onion in olive oil until soft and translucent. Add in minced garlic and sauté for a minute until the garlic is fragrant. Add in red bell peppers and Pederson’s Farms Chorizo. Using a wooden spoon, break up the chorizo and cook for ten minutes or until the bell peppers are soft and the chorizo is cooked through. Add in Cece’s™ Veggie Co. Butternut Veggiccine and sauté for four minutes or al dente. Salt and pepper to taste, and enjoy!
