Baked Ham and Noodles

  • 1 1/2 cups wide egg noodles
  • 2 Tbs butter
  • 2 Tbs flour
  • 1 cup light cream
  • 1 cup shredded Swiss cheese
  • 2 cups diced cooked ham
  • 1 cup frozen peas, thawed
  • 1/2 onion, finely chopped
  • 2 Tbs fresh lemon juice
  • 1 Tbs horseradish, optional
  • 1/4 cup breadcrumbs
  • 1 Tbs butter

Step 1

Preheat oven to 350°°F. Cook noodles according to package directions; drain.
In a medium saucepan melt 2 tablespoons butter over medium heat. Add flour; stir until combined. Stir in cream; cook and stir until thickened and bubbly. Add cheese, stirring until cheese melts. Stir in ham, peas, onion, lemon juice and horseradish. Carefully stir in cooked noodles.
Place noodle mixture in a 1 1/2-quart casserole dish. Sprinkle with breadcrumbs. Dot with 1 tablespoon butter.
Bake 25 to 30 minutes or until heated through and edges are bubbly. Serve hot.
