LEMONADE CAKE WITH LEMON CREAM CHEESE FROSTING

Ingredients

  • 1 Lemon boxed cake
  • 4 eggs
  • 1 1/4 c milk
  • 1/3 c vegetable oil
  • 2 TBS lemonade concentrate
  • GLAZE
  • 2 TBS lemonade concentrate
  • 1 C powdered sugar
  • 1 TBS water

Step 1

Preheat oven to 350. Spray 2, 8” round cake pans with cooking spray. In a mixer, beat all ingredients on low for 30 seconds and then on medium for 2 minutes. Bake according to package directions. Let cakes cool in pan (about an hr). Don’t remove from pans. When cooled, level them off so they are flat on top. Poke holes in part of cake that wasn’t cut using a fork.
To make glaze, in medium bowl, combine powdered sugar, lemonade, and water. Stir until smooth. Pour equally over the top of the cakes still in cake pans. Cover and let sit for at least an hr. (overnight in fridge is better)
** Frosted with regular buttercream frosting**
