medium red potatoes ( about 2 lbs. ) thinly sliced
pkg.(10 oz. ) frozen corn
cups vegetable broth
cups fresh baby spinach
1. In a 12" skillet, heat the oil over medium-high heat. Add the onion and sausage;cook and stir until onion is tender and sausage is browned. Add garlic and crushed red pepper flakes; cook for 1 minute longer. 2 Add the red potatoes, corn, vegetable broth and pepper; bring to a boil. Reduce heat;simmer, covered for 12-15 minutes or until potatoes are tender. Add spinach; cook until wilted.
